Lamb Burgers and Heirloom Tomato Salad


Burgers (four ¼ lb patties)
1 lb ground lamb
½ C feta cheese crumbles
1/3 C Tzatziki sauce
1 TBSP chopped fresh dill
1 egg
1 garlic clove chopped
Dash of salt & pepper

2-4 Heirloom tomatoes
Kalamata olives
Feta crumbled to sprinkle on top
Tzatziki as dressing
Salt & pepper to taste
Fresh dill


Choose your favorite naan, pita or flatbread
Olive Oil and Salt

Separate the ground lamb into a large bowl. Mix the feta, Tzatziki sauce, fresh dill, egg and garlic in a small bowl. Add the mixture to the ground lamb. Gently mix with your hands and form into four patties. Salt and pepper both sides. Heat a large skillet on med-hi. When skillet is hot, add burgers. The hot skillet will create a good sear that adds flavor and seals in the juices. Cook for four minutes on each side.

Salad & Chips
Cut tomatoes into large chunks, add olives, sprinkle with
feta. Top with cracked ground pepper and dill. Salt the
tomatoes if you like, but keep in mind the feta and olives are
salty. Dress with Tzatziki. For the chips cut the bread into
triangles. Heat a large skillet with olive oil. Gently lay the
chips in and pan fry on each side until crisp. Lay out on a
paper towel, salt immediately.
